Siobhan Ní Ghairbhith, Director, Sales & Marketing A former school teacher turned cheese maker! She took over St Tola after the original owners were selling up in 1999. Siobhan is the former Chairperson of CAIS, a member of Slow Food Ireland and a member of the Taste Council. She is a fervent believer in organic farming practises, a fluent Irish speaker and a passionate advocate of Irish food, culture and music. Siobhan looks after Sales and Marketing for St Tola.

Sally Barnes, the founder & owner of Woodcock Smokery, has been smoking fish since 1981 in Castletownshend, Co. Cork.  Sally and her daughter Joleine only produce smoked products using fresh, wild fish caught by sustainable methods. You will not find artificial chemicals or dyes here, only traditional smoking methods over native hardwoods plus lots of skill and time. Sally epitomises the word artisanal. Two sisters, Karen and Natalie began playing with chocolate in 2013 and have grown little-by-little producing some of the best chocolate bars and truffles in Ireland.
