Thomasina did the Ballymaloe Cookery School 12 Week Certificate Course in January 2002, and has gone on to great success. After Ballymaloe, Thomasina spent a short time making Gubbeen Cheese in Schull, West Cork, and travelled around Ireland with Clodagh McKenna selling homemade pasta, sauces and sourdough breads that they would make all night to sell all day.

I did the September 2010 course, I had done a couple of short courses and decided that the 12 week was the one for me. As I was likely to face redundancy the time was right to get new skills and prepare for a new career.

The Glasshouses

In addition to our Outdoor Vegetable Patch, we have one acre under glasshouse at Ballymaloe Cookery School where we grow an incredible range of produce each year. Originally used by the late Ivan Allen for the sole production of tomatoes and mushrooms, they have since been adapted to house many more varieties of fruits and vegetables. There are three houses which continue into each other.
