Once I was lucky enough to have a waitress write down the recipe for their Parmesan crust for me, score! 
 
It definitely makes our chicken/steak nights way more fun. And the marinade for this chicken makes it taste even more like the version you would get at Longhorn.
 
For an easy shortcut, you can marinate the chicken in Italian Salad dressing. 😊

Ingredients:
-2 tablespoons olive oil
-1 medium zucchini 
-Salt and pepper to taste
-2 tomatoes, cut into thin slices
-6 slices fresh mozzarella cheese
-3 tablespoons fresh minced basil
-1 tablespoon balsamic glaze

INSTRUCTIONS:

•Heat a grill-pan over medium heat.
•Cut zucchini in half lengthwise. Brush the cut side of the zucchini with olive oil and season with salt and pepper.
•Place zucchini, cut side down and cook until the zucchini is charred and beginning to soften, about 8-10 minutes.

Ingredients for the chicken:
2 large chicken breasts
3 oz cream cheese
1/4 cup halved cherry tomatoes
1/2 cup chopped fresh spinach
2 tbsp olive oil
Seasonings of your choice 

For the sauce: 
2 tbsp butter
1/2 cup heavy cream

Instructions:

3. Secure with toothpicks and bake @ 375F for 30-40 minutes. (Until internal temp reaches 165F)
