传统月饼~莲蓉馅 【Traditional Mooncake~Lotus paste】

做了一小份的莲蓉馅月饼, 随意的拍了几张做个记录吧! 【传统月饼~白莲蓉馅, 共做7个80克, 2个125克】 [月饼皮材料] 150克底筋面粉 105克糖浆 28克花生油 1/4茶匙碱水 【馅料】 320克白莲蓉+50克烤香杏仁片 【做法】 1. 将糖浆, 碱水和花生油混合均匀, 加入面粉搅拌成面团, 静置2-3小时至不粘水后方可使用。 2. 将面团分割成适合模具的份量, 搓圆。 3. 将面团擀成圆形,包入有份馅料, 收紧封口, 搓圆。 4. 将裹好的月饼球放入月模里, 以手指紧压, 直接压入烤盘里。 5. 送入预热烤箱以170度烘烤10分钟, 取出, 静置10分钟至冷却后, 涂上有层蛋液。 6. 再度送入烤箱里, 继续烘烤15分钟至熟或上色。 7. 取出, 放在铁架上散热, 待回油2-3天后即可享用。 给自己的记录, 这个食谱共做了以下的份量: ~ 月饼重量80克, 馅料35克+1粒咸蛋黄 ~ 月饼重量80克,馅料50克无咸蛋 ~ 月饼重量125克, 馅料75克+1粒咸蛋黄) 【Traditional Mooncakes~ White lotus paste】 yields…

莲蓉椰丝月饼 Lotus Paste Shredded Coconut Moon Cake

剩了一点莲蓉馅,剩了一点白椰丝馅,干脆将两者match在一起, 结果就造就了这个美味的月饼,我是觉得很美味啦!呵呵! 因为没有裹入咸蛋黄,所以就裹入了白椰丝代替,这样也不会因为吃太多的莲蓉馅,而觉得腻! 最重要是可以用完剩下一点不三不四的馅料份量,因为丢了可惜嘛,所以就变变变, 结果不小心就变出了这个也是很美味的双味月饼,好吃好吃! 材料与做法 面粉 - 150g(我用特级月饼烘皮粉) 糖浆 - 100g 花生油 - 30g 碱水 - 1/2小匙 把所有材料(除面粉)倒入容器里搅拌均匀,加入过筛的面粉,用勺子拌均匀, 把容器盖上,放置一旁休面最少30分钟或至不粘手,即可使用。 皮分成7份,1份40g,搓圆备用。 125g模具馅料 莲蓉馅 - 370g 烤香的白瓜子 - 40g 混合拌匀,分成7份,1份60g,搓圆备用。 瓜子的份量随个人喜欢而做加减,总之莲蓉馅料的总重量是420g。 白椰丝馅 - 175g 椰蓉馅分成7份,1份25g,搓圆备用。 白椰丝馅的做法可以按这里,椰蓉月饼。 莲蓉馅包入椰丝馅,搓圆备用。 冷藏过的莲蓉馅,会出油,所以取出要用时需要再揉和一下,…
