Za'atar - 4 tablespoons fresh thyme leaves, stripped from stems (or equivalent dried)    2 teaspoons ground sumac*  scant 1/2 teaspoon fine sea salt, or to taste  1 tablespoon toasted sesame seeds

Za'atar / recipe for Middle Eastern spice blend. I needed some this weekend for a lemony tahini salad dressing tahini to lemon + some water to thin and a good dash of za'atar) to server over roasted cauliflower.

Za'atar is a wonderfully tangy, herb-forward Middle Eastern spice blend.

cup hazelnuts cup coriander seeds 3 tablespoons sesame seeds 2 tablespoons cumin seeds 1 tablespoon black peppercorns 1 teaspoon fennel seeds 1 teaspoon dried mint leaves 1 teaspoon salt Dip bread in olive oil then in dukkah

Dry Onion Soup Mix:  2/3 cup dried, minced onion  3 teaspoons parsley flakes  2 teaspoons onion powder  2 teaspoons turmeric  1 teaspoon celery salt  1 teaspoon sea salt  1 teaspoon sugar  1/2 teaspoon ground pepper  Mix all ingredients in a jar, then give the jar a good shake.  I’d recommend shaking the jar to mix the ingredients well before each use.   Use 4 tablespoons in a recipe in place of 1 packet of onion soup mix.  Store this in a dry, cool place.

"Dairy free Ranch" 5 tablespoons dried minced onions 7 teaspoons parsley flakes 4 teaspoons salt 1 teaspoon garlic powder Mix together and store in an air tight container.

Thai Yellow Curry Spice Blend.   - 1 tablespoon cumin - 1 tablespoon cinnamon - 1 tablespoon ground ginger - 1 tablespoon turmeric - 2 teaspoons cayenne pepper - 2 teaspoons ground coriander - 2 teaspoons fennel seeds - 2 teaspoons white pepper - 1 teaspoon garlic powder - 1 teaspoon cardamom - 1 teaspoon mace.   Mix together all spices. Store in an airtight container in a cool, dry place until ready to use. Makes 7 1/2 tablespoons curry powder

THAI YELLOW CURRY SPICE BLEND == 1 T cumin 1 T cinnamon 1 T ground ginger 1 T turmeric cayenne pepper ground coriander fennel seeds white pepper garlic powder cardamom mace ====

To make about 1/2 cup of za’atar, put 3 Tbs. dried thyme, 1 Tbs. lightly toasted sesame seeds, 1 Tbs. ground sumac, 1/2 tsp. dried oregano or marjoram, and 1/4 tsp. kosher salt in a spice grinder. Pulse a few times to mix and break up some of the seeds—there should still be many whole seeds visible. Store in a cool, dark place for up to six months.  If sumac is unavailable, substitute 2 Tbs. dried lemon peel.
