Moroccan Baked Chicken with Chickpeas and Rice
My Chicken Basque recipe is such a huge hit because, I imagine, everything needed for a meal for four people is cooked in one large cooking pot with no extra vegetables needed. This meant I was under a lot of pressure to produce a recipe that could match it. So, to a flourish of trumpets, here it is.
Pork Chops Baked with Wild Mushrooms and Creme Fraiche
This is quite simply the best recipe I've ever done for pork chops. Years ago I had to make do with just cultivated mushrooms and double cream, which always tended to separate in the cooking. Now, with the addition of porcini mushrooms and that heavenly ingredient crème fraîche, the recipe is even more wonderful.
Chicken with Lemon Sauce
Chicken with lemon sauce was in every recipe book in the Seventies but then seemed to lose its popularity. But we have revisited my old recipe and I have to say it still tastes extremely good.
American Meatloaf with Red Onion, Tomato and Chilli Relish
Serve this hot on a cold winter's day with some buttery jacket potatoes or, if the weather is warm, it's lovely served cold with salads and chutney or pickles. You can take thick chunks to serve with crusty bread on a picnic, and any leftover meatloaf is wonderful in sandwiches for a lunch box.
Oven-baked Pork Chops in Maple Barbecue Sauce
Sorry about the long list of ingredients in this sauce, but it really does take only 5 minutes to make, then cooks into a heavenly, sticky, spicy goo.
