Pear tart "Bourdaloue"

Today we're making another French pastry classic : the Tarte Bourdaloue, a sweet shortcrust tart filled with a combination of almond cream and poached pear. This popular dessert was named after the street "Rue Bourdaloue" in the 9th arrondissement of Paris which, in turn, has been named after Louis Bourdaloue, a French Jesuit of the 17th century. Bourdaloue was renowned for the quality of his sermon and especially their extreme length, allegedly testing the limits of his devout ladies…

Traditional French King's cake or Galette des Rois

Today we made a "Galette des Rois", a French cake traditionally eaten for the epiphany the first week of January. Usually, a little figurine, la fève, which can represent anything from a car to a cartoon character (a little batman in our case), is hidden in the cake and the person who finds the trinket in his or her slice becomes king for the day and will have to offer the next cake. 30 minutes 35 minutes 8 slices Ingredients • 2 puff pastry rolls • Mix of 1 egg yolk + 1 egg For the crème…

Classic Madeleines

Link to printable version Today we baked another French classic : the Madeleine. This famous delicacy is usually enjoyed for afternoon tea. Madeleines are very small sponge cakes, traditionally flavoured with lemon, and have a distinctive shell-like shape, much easier to do than commonly thought. The legend of this cake is traced back to the 18th century. Stanisław Leszczyński, Duke of Lorraine, was having a large dinner party in his Château de Commercy, in 1755. In the kitchen, an argument…

Wine poached Pears

Link to printable version For Halloween, we decided to do wine poached pears ! Ok, we know it isn't a Halloween classic but we thought the deep red colour of the pears looks almost blood-like (and with some whipped cream, we even achieved this brain-like look in our serving glasses). Spooky ! Wine poached pears are a traditional dessert from the Burgundy vineyards in eastern France, more specifically, the Beaujolais province. In French, we would call this dessert "Poires à la Beaujolaise"…

Apple tart - Tarte aux pommes

It was quite sunny in Dublin last week-end, so we decided to go to the food market to grab some fresh fruit. We saw some organic apples looking perfectly red and ripe, so we couldn't resist making an apple tart. A classic among classics, the apple tart is as popular in France as it is in Ireland, although the way we enjoy it isn't quite the same. Indeed, while in Ireland we mostly eat apple pies, made with a top & bottom crust filled with apples, in France we mostly have them presented as a…

Crêpes (or French pancakes) batter

As pancake Tuesday is on its way, today we have made some crêpes. In Ireland and other parts of the world, Pancake Tuesday, also called "Shrove Tuesday" falls on the day before the start of Lent. The closest equivalent in France is the "Fête de la Chandeleur" (Candlemas), that traditionally celebrates the presentation of Jesus at the Temple and marks the end of the Christmas season on the 2nd of February. When it comes to the recipe it's hard to know which way to turn. They are usually made…
