Vegetable Chow Mein: This was really good, even the boys ate it. I would add more veggies next time - maybe some broccoli, baby corn or snap peas. Couldn't find chow mein noodles, so used thin spaghetti - worked fine.
Meal 18 was a great find from a friend. I did tofu AND chicken for extra protein - - - - Thai-style sweet and spicy pineapple fried rice with red bell pepper, cashews and cilantro. This is a healthy and quick, vegetarian weeknight dinner!
